Cashew Sour Cream Snack Cake

- 2/3 cup softened butter or 2/3 cup margarine
- 2/3 cup brown sugar
- 2 eggs
- 2 cups flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 2 tablespoons molasses
- 1 cup sour cream
- 3/4 cup broken cashews
- 1/2 cup softened butter or 1/2 cup margarine
- 1/2 cup sour cream
- 2 cups powdered sugar
- 3/4 cup broken cashews
Recipe
- 1 preheat oven to 350 degrees.
- 2 combine flour, salt and soda and set aside. in a small bowl,combine sour cream & molasses.
- 3 in a medium mixing bowl, mix butter (or margarine) and brown sugar till light. add eggs one at a time. alternate flour mixture and sour cream mixture till the batter is well blended. fold in 3/4 celsius cashews.
- 4 pour mixture into greased 8' square pan and bake for 30 minutes in a 350 degree oven. cool and frost.
- 5 frosting:.
- 6 combine butter (or margarine) and sour cream in medium mixing bowl. add powdered sugar and beat till combined. frost cooled cake and sprinkle cashews over the top.
