British Scones (makeover - Light)

Ingredients

  • Servings: 8
  • 1 1/4 cups all-purpose flour
  • 1 cup cake flour
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons cold butter
  • 2 tablespoons canola oil
  • 1 egg, lightly beaten
  • 1/3 cup buttermilk
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon sugar

Recipe

  • 1 preheat oven to 400°f.
  • 2 in a large bowl, combine the flours, brown sugar, baking powder, baking soda and salt.
  • 3 cut in butter until mixture resembles coarse crumbs.
  • 4 combine the egg, buttermilk, oil and vanilla.
  • 5 add to crumb mixture and stir until a soft dough forms.
  • 6 turn onto a floured surface and knead gently 6-8 times.
  • 7 pat dough into a 6-inch circle and cut into eight wedges.
  • 8 separate wedges and place 1 inch apart on an ungreased baking sheet.
  • 9 brush tops with milk; sprinkle with sugar.
  • 10 bake for 12-14 minutes or until lightly browned. remove to wire rack and serve warm.
