British Scones (makeover - Light)

Ingredients

- 1 1/4 cups all-purpose flour
- 1 cup cake flour
- 2 tablespoons brown sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons cold butter
- 2 tablespoons canola oil
- 1 egg, lightly beaten
- 1/3 cup buttermilk
- 1/2 teaspoon vanilla extract
- 1 teaspoon sugar
Recipe
- 1 preheat oven to 400°f.
- 2 in a large bowl, combine the flours, brown sugar, baking powder, baking soda and salt.
- 3 cut in butter until mixture resembles coarse crumbs.
- 4 combine the egg, buttermilk, oil and vanilla.
- 5 add to crumb mixture and stir until a soft dough forms.
- 6 turn onto a floured surface and knead gently 6-8 times.
- 7 pat dough into a 6-inch circle and cut into eight wedges.
- 8 separate wedges and place 1 inch apart on an ungreased baking sheet.
- 9 brush tops with milk; sprinkle with sugar.
- 10 bake for 12-14 minutes or until lightly browned. remove to wire rack and serve warm.
