Aspen Carrot Cake With Raisins And Cream Cheese Frosting

Ingredients

  • 1 cup vegetable oil
  • 1 1/2 cups brown sugar
  • 4 large eggs
  • 2 1/2 cups whole wheat pastry flour
  • 3/4 teaspoon baking soda
  • 1/3 cup pineapple juice
  • 3/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 2 cups carrots, grated
  • 1/2 cup raisins
  • 4 cups powdered sugar
  • 1/2 cup butter
  • 1 tablespoon half-and-half
  • 4 ounces cream cheese
  • 1/2 teaspoon vanilla

Recipe

  • 1 to make the cake: preheat the oven to 350 degrees f.
