Apple Pecan Layer Cake

Total Time: 1 hr 5 mins Preparation Time: 30 mins Cook Time: 35 mins

Ingredients

  • Servings: 12
  • 2 1/2 cups flour
  • 2 cups sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups applesauce
  • 3/4 cup oil
  • 2 eggs
  • 1/2 cup chopped pecans
  • 1/2 cup butter (no subs)
  • 4 1/2 cups powdered sugar
  • 6 -8 teaspoons apple juice

Recipe

  • 1 heat oven to 350f degrees.
  • 2 grease and flour 2 9in cake pans.
  • 3 in lg bowl mix first 6 ing.
  • 4 add applesauce, oil, and eggs.
  • 5 blend until moistened.
  • 6 beat on hi for 2 minutes.
  • 7 stir in pecans.
  • 8 pour into pans, bake 35 minutes, or until toothpick comes out clean.
  • 9 remove from pans, cool.
  • 10 --------frosting-------.
  • 11 in small heavy saucepan, on med heat, heat butter until light golden brown, stirring constantly.
  • 12 remove from heat, cool.
  • 13 in lg bowl mix powdered sugar, 4 t of the apple juice and the butter.
  • 14 beat until well blended.
  • 15 add more apple juice as needed to make the right spreading consistency.
