Apple Loaf

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon (or penzeys cake spice)
  • 1/4 teaspoon baking powder
  • 3 eggs
  • 3 cups granny smith apples, shredded
  • 2 cups sugar
  • 2/3 cup vegetable oil
  • 1 1/2 teaspoons vanilla extract

Recipe

  • 1 preheat oven to 325°f.
  • 2 grease and flour two 8x4x2 in loaf pans.
  • 3 in a bowl, combine flour, soda, salt, cinnamon, and baking powder.
  • 4 in a separate, larger bowl, combine eggs, apples, sugar, oil, and vanilla.
  • 5 stir in flour mixture just until moistened.
  • 6 pour batter into prepared pans.
  • 7 bake for 1 hour or until toothpick inserted in centre of loaf comes out clean.
  • 8 cool in pans for 10 minutes.
  • 9 remove and cool on wire racks.
