Almond Paste

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 2 3/4 cups sugar
  • 3 1/4 cups icing sugar
  • 2 1/2 lbs ground almonds
  • 4 eggs, beaten
  • 2 tablespoons lemon juice
  • 2 1/2 teaspoons vanilla extract

Recipe

  • 1 mix sugars.
  • 2 add almonds.
  • 3 mix eggs, lemon juice and vanilla.
  • 4 mix together.
  • 5 knead til pliable.
  • 6 divide in 3.
  • 7 wrap each in tinfoil.
  • 8 let stand overnight.
  • 9 roll out 1 ball to 1/2 inch thick and cover cakes.
  • 10 let stand overnight covered with a tea towel.
  • 11 ice cakes if desired.
