Carrot Snack Cake

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • Servings: 9
  • 1 cup shortening (not butter flavored)
  • 3/4 cup sugar
  • 1 egg
  • 1 cup cooked mashed carrot
  • 1 teaspoon vanilla or 1 teaspoon lemon extract
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Recipe

  • 1 cream the shortening and sugar.
  • 2 beat in egg, carrots and extract until thick and yellow.
  • 3 dump in the remaining ingredients.
  • 4 bake in an 8x8 or 9x9 pan, at 350, until they test done (35-45 minutes).
  • 5 cut in nine pieces (3x3).
