Carrot Snack Cake

Ingredients
- Servings: 9
- 1 cup shortening (not butter flavored)
- 3/4 cup sugar
- 1 egg
- 1 cup cooked mashed carrot
- 1 teaspoon vanilla or 1 teaspoon lemon extract
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Recipe
- 1 cream the shortening and sugar.
- 2 beat in egg, carrots and extract until thick and yellow.
- 3 dump in the remaining ingredients.
- 4 bake in an 8x8 or 9x9 pan, at 350, until they test done (35-45 minutes).
- 5 cut in nine pieces (3x3).
