Canadian Tea Cakes

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 36
  • 1/4 cup powdered sugar
  • 1 cup all-purpose flour
  • 1/2 cup butter
  • 2 eggs
  • 1 1/2 cups brown sugar, lightly packed
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup coconut
  • 1 cup walnuts, chopped
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 combine powdered sugar and flour together in medium bowl.
  • 3 cut in butter until mixture resembles fine cornmeal.
  • 4 press into bottom of greased 8x8 inch baking pan.
  • 5 bake about 10 minutes or until lightly golden.
  • 6 while crust is baking, mix filling ingredients together.
  • 7 pour filling mixture over baked crust and return to oven.
  • 8 bake about 30 minutes.
  • 9 cool completely and cut into small squares.
  • 10 note: this recipe doubles well.
