Canadian Tea Cakes

Ingredients

- 1/4 cup powdered sugar
- 1 cup all-purpose flour
- 1/2 cup butter
- 2 eggs
- 1 1/2 cups brown sugar, lightly packed
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1 cup coconut
- 1 cup walnuts, chopped
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
Recipe
- 1 preheat oven to 350 degrees.
- 2 combine powdered sugar and flour together in medium bowl.
- 3 cut in butter until mixture resembles fine cornmeal.
- 4 press into bottom of greased 8x8 inch baking pan.
- 5 bake about 10 minutes or until lightly golden.
- 6 while crust is baking, mix filling ingredients together.
- 7 pour filling mixture over baked crust and return to oven.
- 8 bake about 30 minutes.
- 9 cool completely and cut into small squares.
- 10 note: this recipe doubles well.
