Aunt Claire's Cornbread

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • 1 cup flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups cornmeal
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup milk

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 mix flour, baking powder, salt, and corn meal together; set aside.
  • 3 in a second bowl, mix together the oil, sugar, eggs and milk.
  • 4 pour the liquid mixture into the dry mixture and beat together.
  • 5 you may need to add a bit more milk - it should be the consistency of cake batter.
  • 6 pour into a greased and floured 9 inch square pan.
  • 7 bake for 35 to 40 minutes.
  • 8 if you would like to add chopped jalapenos or cheese, i would suggest decreasing the amount of sugar, as this does make a pretty sweet bread, and i don't think it would be suitable flavour with heat!
