Almond Pound Cake

Ingredients

- 1 cup unsalted butter, softened
- 2 1/2 cups sugar
- 4 large eggs
- 3 1/4 cups sifted flour
- 1 teaspoon baking soda
- 1 1/4 cups buttermilk
- 2 teaspoons almond extract
- confectioners' sugar, to sprinkle on top
- 7 ounces almond paste
Recipe
- 1 preheat oven to 325°f.
- 2 in a large bowl, blend together butter and sugar and almond paste.
- 3 add eggs one at a time, beating well after each addition.
- 4 stir in the extracts and beat until smooth.
- 5 sift together dry ingredients.
- 6 add to the butter mixture, alternating with the buttermilk.
- 7 spray sides and bottom of two loaf pan.
- 8 scoop batter into the pan.
- 9 bake 45 minutes to 1 hour or until toothpick inserted in center comes out clean.
- 10 let cake cool in pan 10 minutes then remove from pan and cool on a rack.
- 11 cut into slices and add fruit toppings and dust with powdered sugar if desired.
