Almond Pound Cake

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 15
  • 1 cup unsalted butter, softened
  • 2 1/2 cups sugar
  • 4 large eggs
  • 3 1/4 cups sifted flour
  • 1 teaspoon baking soda
  • 1 1/4 cups buttermilk
  • 2 teaspoons almond extract
  • confectioners' sugar, to sprinkle on top
  • 7 ounces almond paste

Recipe

  • 1 preheat oven to 325°f.
  • 2 in a large bowl, blend together butter and sugar and almond paste.
  • 3 add eggs one at a time, beating well after each addition.
  • 4 stir in the extracts and beat until smooth.
  • 5 sift together dry ingredients.
  • 6 add to the butter mixture, alternating with the buttermilk.
  • 7 spray sides and bottom of two loaf pan.
  • 8 scoop batter into the pan.
  • 9 bake 45 minutes to 1 hour or until toothpick inserted in center comes out clean.
  • 10 let cake cool in pan 10 minutes then remove from pan and cool on a rack.
  • 11 cut into slices and add fruit toppings and dust with powdered sugar if desired.
