Cashew Nut Cake(aruba)

Ingredients

  • Servings: 6
  • 1/2 cup margarine
  • 1 cup sugar
  • 3 egg whites
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 cup milk
  • 1/2 teaspoon almond extract
  • 2 cups ground cashews
  • 2 egg whites
  • 1 cup confectioners' sugar
  • 1/3 cup margarine
  • 1 teaspoon almond extract
  • 1 teaspoon salt
  • 1 cup ground cashews

Recipe

  • 1 cake:.
  • 2 cream margarine and sugar until smooth. add egg whites and mix well. add the rest of the cake ingredients and mix well. grease a 9′ round cake pan and bake at 350ºf for 25 minutes. let cool.
  • 3 frosting:.
  • 4 beat egg whites with sugar until stiff. add margarine, salt, almond extract and beat well. spread on top and sides of cake.
  • 5 serving suggestions:.
  • 6 traditional decorations are maraschino cherries and lime confetti(small pieces of shredded lime peel).
