Chewy Butterscotch Cashew Bars

Total Time: 1 hr 13 mins Preparation Time: 20 mins Cook Time: 53 mins

Ingredients

  • 2 cups robin hood all-purpose flour or 2 cups whole wheat flour
  • 1/2 cup granulated sugar
  • 3/4 cup butter, softened
  • 4 eggs
  • 1 cup granulated sugar
  • 1 cup corn syrup
  • 1/4 cup butter, melted
  • 1 (300 g) package butterscotch chips
  • 1 1/3 cups halved cashews

Recipe

  • 1 crust: preheat oven to 350f (180c).
  • 2 grease a 13â€? x 9â€? cake pan.
  • 3 combine all ingredients for crust, mixing until crumbly.
  • 4 press firmly into prepared pan.
  • 5 bake in centre of 350f oven for 15-18 minutes, or until light golden.
  • 6 topping: beat eggs, sugar, corn syrup and melted butter until blended.
  • 7 stir in butterscotch chips and cashews.
  • 8 pour evenly over crust.
  • 9 bake for 30-35 minutes longer, or until set and golden.
  • 10 cool completely in pan on rack then cut into bars.
  • 11 tip: chill for easy cutting.
  • 12 store in refrigerator.
  • 13 excellent for freezing.
