Chewy Double Ginger Squares

Ingredients

  • Servings: 24
  • 1 cup packed brown sugar
  • 1/2 cup molasses
  • 1/4 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1 pinch salt
  • 1/2 cup crystallized ginger, chopped

Recipe

  • 1 preheat oven to 350f (180c).grease 13-x 9-inch (3.5 l) metal cake pan; line with parchment paper. set aside.
  • 2 in bowl, whisk sugar, molasses, butter, eggs and vanilla.
  • 3 in separate bowl, whisk flour, ginger, baking soda, cinnamon, cloves and salt; stir into butter mixture until combined.
  • 4 stir in crystallized ginger, scrape into prepared pan.
  • 5 bake in centre of oven until cake tester inserted in centre comes out clean, about 40 minutes.
  • 6 let cool in pan on rack for 45 minutes.
