Blender Chocolate Chip Cupcakes

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1 egg
  • 1/3 cup shortening
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 1 1/4 cups flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Recipe

  • 1 prepare cupcake tins; lightly grease or insert paper liners.
  • 2 place all ingredients in blender container in order listed. cover and blend on high speed, stopping blender occasionally to scrape sides, for 45 seconds. batter will be slightly lumpy.
  • 3 fill each muffin cup 2/3 full. bake at 350 degrees for 25 to 30 minutes until toothpick tests done. immediately remove from pan; cool completely. frost as desired.
