Butter Pecan Cake

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • 1 lb butter, softened
  • 6 large eggs
  • 1 teaspoon baking powder
  • 1 lemon, juice of
  • 2 1/2 cups sugar
  • 4 cups all-purpose flour
  • 1 1/2 ounces lemon extract
  • 2 cups pecans, chopped

Recipe

  • 1 in a bowl, cream butter and sugar.
  • 2 blend in eggs, one at a time.
  • 3 stir in three cups of flour (sifted) a little at a time.
  • 4 add lemon extract and lemon juice.
  • 5 add nuts and remaining flour.
  • 6 bake in well greased tube cake pan in slow oven (300°- 350°) about 2 hours.
