Blueberry Coffee Cake

Ingredients

  • 1/4 cup butter
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups blueberries
  • 1/2 cup brown sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon cinnamon
  • 1/2 cup chopped pecans
  • 3 tablespoons butter

Recipe

  • 1 preheat oven 375° and grease and flour a 9-inch springform pan.
  • 2 sift together flour, baking powder and salt; set aside for now.
  • 3 in large bowl, cream butter and sugar until light and fluffy. beat in egg.
  • 4 beat in flour mixture alternately with milk, mixing just until combined.
  • 5 stir in blueberries and pour mixture into pan.
  • 6 in small bowl, combine brown sugar, 3 tablespoons flour, cinnamon and the pecans.
  • 7 cut in butter until crumbly.
  • 8 sprinkle over batter.
  • 9 bake 40 to 45 minutes, or until a toothpick inserted in center comes out clean.
  • 10 allow to cool a bit before serving.
