Blueberry Coffee Cake With Brown Sugar Topping

Ingredients

  • Servings: 15
  • 3 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup sugar
  • 3/4 cup butter, softened
  • 1 1/2 teaspoons vanilla
  • 3 eggs
  • 1 1/2 cups sour cream
  • 2 (21 ounce) cans blueberry pie filling
  • 1/3 cup packed brown sugar
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 1/2 cups pecans, chopped

Recipe

  • 1 sift the flour, baking powder and salt in a bowl and mix well.
  • 2 cream the sugar and butter in a mixing bowl until light and fluffy.
  • 3 beat in the vanilla and the eggs.
  • 4 add the dry ingredients alternately with the sour cream mixing well after each addition.
  • 5 in a greased 9x13 pan, layer half the batter, all of the pie filling, rest of the batter.
  • 6 sprinkle with brown sugar topping.
  • 7 bake at 350º for 1 hour.
  • 8 for the topping: combine all ingredients in a snall bowl and mix well.
