Blueberry Cake

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 9
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs, separated
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup milk
  • 2 cups frozen blueberries, thawed and drained
  • 2 teaspoons flour

Recipe

  • 1 preheat oven to 350*.
  • 2 cream butter; gradually add sugar at med speed of mixer.
  • 3 add egg yolks 1 at a time, beat well.
  • 4 combine flour,baking powder,salt,cinnamon and nutmeg.
  • 5 add to cream mixture alternately with milk, beginning and ending with flour.
  • 6 mix just until blended.
  • 7 beat egg whites at high speed until stiff.
  • 8 fold into batter.
  • 9 mix blueberries with 2 t flour.
  • 10 fold into batter.
  • 11 pour into greased 8in square baking pan.
  • 12 bake for 50-55 minutes.
  • 13 let cool in pan.
