Blueberry Cake

Ingredients

- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs, separated
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup milk
- 2 cups frozen blueberries, thawed and drained
- 2 teaspoons flour
Recipe
- 1 preheat oven to 350*.
- 2 cream butter; gradually add sugar at med speed of mixer.
- 3 add egg yolks 1 at a time, beat well.
- 4 combine flour,baking powder,salt,cinnamon and nutmeg.
- 5 add to cream mixture alternately with milk, beginning and ending with flour.
- 6 mix just until blended.
- 7 beat egg whites at high speed until stiff.
- 8 fold into batter.
- 9 mix blueberries with 2 t flour.
- 10 fold into batter.
- 11 pour into greased 8in square baking pan.
- 12 bake for 50-55 minutes.
- 13 let cool in pan.
