Blueberry Bread

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • Servings: 12
  • 2 3/4 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs, beaten
  • 1 cup buttermilk
  • 1 cup butter, melted
  • 1 tablespoon vanilla extract
  • 3 cups fresh blueberries
  • 1/2 cup sugar
  • 1/4 cup flour
  • 1/4 cup butter, very cold
  • 1/2 teaspoon cinnamon

Recipe

  • 1 preheat oven to 350°f.
  • 2 butter and flour 9 x 13 inch baking pan.
  • 3 cut the cold butter for the topping into small cubes and put back in the refrigerator to keep cool.
  • 4 sift the dry ingredients for the cake together.
  • 5 in a large bowl, mix together all the wet ingredients for the cake, except for the blueberries.
  • 6 add the dry ingredients to the wet ingredients and mix just until incorporated (an electric mixer is not necessary, i used a wooden spoon).
  • 7 pour the batter into the prepared pan and sprinkle the blueberries on top.
  • 8 using your fingers crumble the topping ingredients in a small bowl. this will not combine completely, there should be small beads of butter throughout the dry ingredients. break the butter up as small as possible.
  • 9 sprinkle the topping over the top of the cake.
  • 10 bake for about 50 minutes or until knife comes out clean. cake should not be dry.
