Blueberry Bread

Ingredients

- 2 3/4 cups flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 eggs, beaten
- 1 cup buttermilk
- 1 cup butter, melted
- 1 tablespoon vanilla extract
- 3 cups fresh blueberries
- 1/2 cup sugar
- 1/4 cup flour
- 1/4 cup butter, very cold
- 1/2 teaspoon cinnamon
Recipe
- 1 preheat oven to 350°f.
- 2 butter and flour 9 x 13 inch baking pan.
- 3 cut the cold butter for the topping into small cubes and put back in the refrigerator to keep cool.
- 4 sift the dry ingredients for the cake together.
- 5 in a large bowl, mix together all the wet ingredients for the cake, except for the blueberries.
- 6 add the dry ingredients to the wet ingredients and mix just until incorporated (an electric mixer is not necessary, i used a wooden spoon).
- 7 pour the batter into the prepared pan and sprinkle the blueberries on top.
- 8 using your fingers crumble the topping ingredients in a small bowl. this will not combine completely, there should be small beads of butter throughout the dry ingredients. break the butter up as small as possible.
- 9 sprinkle the topping over the top of the cake.
- 10 bake for about 50 minutes or until knife comes out clean. cake should not be dry.
