Amazing Gluten Free Pumpkin Spice Pancakes

Ingredients
- 1 1/2 cups gluten-free flour, mix (garbanzo, potato starch, etc.)
- 1/4 cup sucanat
- 1/2 cup pumpkin
- 2 eggs
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon baking powder
- 1 1/4 cups water
- 1 1/2 tablespoons oil (i use grape seed)
Recipe
- 1 combine dry ingredients and whisk together.
- 2 beat eggs and add.
- 3 add remaining wet ingredients and whisk together.
- 4 put a light coating of oil or butter on your griddle.
- 5 cook as normal for pancakes.
