Amazing Gluten Free Pumpkin Spice Pancakes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 1/2 cups gluten-free flour, mix (garbanzo, potato starch, etc.)
  • 1/4 cup sucanat
  • 1/2 cup pumpkin
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon baking powder
  • 1 1/4 cups water
  • 1 1/2 tablespoons oil (i use grape seed)

Recipe

  • 1 combine dry ingredients and whisk together.
  • 2 beat eggs and add.
  • 3 add remaining wet ingredients and whisk together.
  • 4 put a light coating of oil or butter on your griddle.
  • 5 cook as normal for pancakes.
