Chi Chi's Sweet Corn Cake
Ingredients

- 1/2 cup butter or 1/2 cup margarine, softened
- 1/3 cup masa harina
- 1/4 cup water
- 1 (10 ounce) package frozen corn, thawed
- 1/3 cup sugar
- 3 tablespoons yellow cornmeal
- 2 tablespoons whipping cream
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- to taste chili pepper, sliced
- to taste parsley, chopped
Recipe
- 1 with an electric mixer, beat butter until fluffy.
- 2 gradually beat in masa harina.
- 3 on low speed, beat in water.
- 4 place corn in bowl of food processor and pulse until chopped coarsely.
- 5 stir in masa mixture. in a small bowl, stir together sugar, cornmeal,cream, baking powder, and salt. stir into corn mixture. spread in a greased 8" sq.
- 6 baking pan.
- 7 cover with foil.
- 8 place in a larger pan and pour boiling water half way up the side of the smaller pan.
- 9 bake at 350 for 50 min., or until set. remove smaller pan from water, uncover and let stand 15 min.
- 10 sprinkle with chilies and parsley, if desired.
