Blueberry Cake

Ingredients
- 1/2 cup butter
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 2 egg yolks
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/3 cup milk
- 2 egg whites
- 1/4 cup granulated sugar
- 1 1/2 cups blueberries
- 1 tablespoon flour
- 1 tablespoon sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg, freshly grated
Recipe
- 1 preheat oven to 350*.
- 2 grease and flour a 9Ć¢€? pan.
- 3 in medium bowl, cream butter with 1/2 cup sugar, add salt, vanilla, egg yolks and beat till fluffy.
- 4 in small bowl, combine 1 ½ cups flour with baking powder; add to creamy mixture alternately with milk mixing to form a smooth batter. set aside.
- 5 in medium bowl gently mix berries with 1tbsp flour, fold into batter and set aside.
- 6 beat egg whites to soft peaks and gently fold into batter. pour in prepared pan. mix remaining sugar, cinnamon and nutmeg; sprinkle over batter.
- 7 bake 45-50 minutes until cake is done. serve warm with a scoop of ice cream.
