Blueberry Cake

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 2 egg yolks
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/3 cup milk
  • 2 egg whites
  • 1/4 cup granulated sugar
  • 1 1/2 cups blueberries
  • 1 tablespoon flour
  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg, freshly grated

Recipe

  • 1 preheat oven to 350*.
  • 2 grease and flour a 9Ć¢€? pan.
  • 3 in medium bowl, cream butter with 1/2 cup sugar, add salt, vanilla, egg yolks and beat till fluffy.
  • 4 in small bowl, combine 1 ½ cups flour with baking powder; add to creamy mixture alternately with milk mixing to form a smooth batter. set aside.
  • 5 in medium bowl gently mix berries with 1tbsp flour, fold into batter and set aside.
  • 6 beat egg whites to soft peaks and gently fold into batter. pour in prepared pan. mix remaining sugar, cinnamon and nutmeg; sprinkle over batter.
  • 7 bake 45-50 minutes until cake is done. serve warm with a scoop of ice cream.
