Apple-filled Cake

Ingredients

- 2 eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 3 tablespoons apple juice
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 4 cups apples, peeled, cored and thinly sliced (about 4 to 5 apples)
- 1/2 cup brown sugar, packed
- 2 teaspoons ground cinnamon
Recipe
- 1 beat the eggs and granulated sugar in a large bowl until thoroughly blended.
- 2 beat in the vegetable oil and apple juice.
- 3 combine the flour, baking powder and salt.
- 4 stir into the egg mixture, beating just until smooth.
- 5 spread half of the batter in a greased 9" x 9" baking pan.
- 6 combine the apples, brown sugar and cinnamon.
- 7 toss lightly to coat.
- 8 spread over the batter in the pan.
- 9 cover with the remaining batter.
- 10 bake in a preheated 350 degree f oven for 50 to 55 minutes or until a toothpick inserted in the centre comes out clean.
- 11 cool completely in the pan on a rack.
