Apple-carrot Cake And Best Ever Cream Cheese Frosting

Ingredients
- 1 cup whole wheat flour
- 1 cup unbleached flour or 1 cup all-purpose flour
- 1 1/3 cups sugar
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 2 eggs
- 2 egg whites
- 1/4 cup unsweetened applesauce
- 1/2 cup 2% buttermilk
- 1 teaspoon vanilla extract
- 1 1/2 cups carrots, shredded (about 2 medium)
- 1 apple, peeled and shredded
- 8 ounces light cream cheese, softened
- 8 ounces fat free cream cheese, softened
- 3 tablespoons light butter, softened
- 1 1/2 cups confectioners' sugar, sifted
- 1 1/2 teaspoons vanilla extract
