Almond Joy Bread

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 3/4 cup canola oil
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla
  • 1 teaspoon coconut extract
  • 3 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons cocoa powder
  • 1 cup buttermilk
  • 1 cup sweetened coconut
  • 1/2 cup almonds, chopped (raw)
  • 1 cup chocolate chips
  • 1 cup sugar
  • 1/2 cup water
  • 1 tablespoon butter
  • 1 teaspoon coconut extract

Recipe

  • 1 preheat oven to 350°f
  • 2 combine the eggs, sugar, canola oil, butter, vanilla, and coconut extract into a large mixing bowl.
  • 3 beat ingredients on medium speed for 2 minutes.
  • 4 in a separate bowl, combine flour, baking soda, baking powder, salt, and cocoa powder. starting with the flour mixture alternate flour, and then buttermilk till all is combined.
  • 5 add egg mixture.
  • 6 mix until just combined. do not over mix. fold in coconut, chocolate chips and almonds.
  • 7 pour into two loaf pans that have been greased and floured or sprayed with cooking spray.
  • 8 bake at 350°f for 1 hour.
  • 9 remove from oven and place on rack to dry. while cakes are still warm, poke several holes in the top of the cake with a fork. drizzle coconut glaze into the holes.
  • 10 coconut glaze:.
  • 11 place ingredients into a small saucepan. bring to a boil. allow to boil for about a minute.
  • 12 turn heat off but leave saucepan on burner. drizzle over bread.
  • 13 cool.
