Blender Cheese Pancakes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 eggs
  • 1 cup low fat cottage cheese
  • 2/3 cup skim milk
  • 1/2 teaspoon vanilla extract
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Recipe

  • 1 combine eggs, cottage cheese, milk and vanilla in blender container.
  • 2 cover; blend until smooth.
  • 3 add flour, baking soda, baking powder and salt.
  • 4 blend on low speed just until mixed.
  • 5 spray nonstick skillet with cooking spray.
  • 6 heat over moderate heat.
  • 7 spoon the batter into hot skillet to make 4-inch pancakes.
  • 8 cook over low heat until bubbles form on surface.
  • 9 turn, cook other side until bottom is golden brown.
