Blender Cheese Pancakes

Ingredients
- Servings: 4
- 2 eggs
- 1 cup low fat cottage cheese
- 2/3 cup skim milk
- 1/2 teaspoon vanilla extract
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Recipe
- 1 combine eggs, cottage cheese, milk and vanilla in blender container.
- 2 cover; blend until smooth.
- 3 add flour, baking soda, baking powder and salt.
- 4 blend on low speed just until mixed.
- 5 spray nonstick skillet with cooking spray.
- 6 heat over moderate heat.
- 7 spoon the batter into hot skillet to make 4-inch pancakes.
- 8 cook over low heat until bubbles form on surface.
- 9 turn, cook other side until bottom is golden brown.
