Banana Walnut Cupcakes With Cream Cheese Frosting

Ingredients
- 1 cup flour
- 2 bananas (mashed)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1/2 cup granulated sugar
- 3/4 cup brown sugar
- 2 eggs
- 1/2 cup butter
- 3/4 cup walnuts (in small pieces)
- 1/4 cup vanilla yogurt
- 4 ounces cream cheese
- 1 teaspoon vanilla
- 1 3/4 cups confectioners' sugar
Recipe
- 1 cupcake batter: cream butter and sugars, add mashed bananas. add eggs and vanilla. add flour, baking soda and salt. stir in yogurt. add walnuts.
- 2 scoop into 12 cupcake papers (i used an ice cream scoop.) bake in a preheated 350 degree oven for 18-22 minutes, or until a toothpick inserted near the center comes out clean. mine took 20 minutes.
- 3 frosting: whip cream cheese, vanilla and confectioners sugar, by hand or electric mixer.
