Banana Walnut Cupcakes With Cream Cheese Frosting

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1 cup flour
  • 2 bananas (mashed)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1/2 cup butter
  • 3/4 cup walnuts (in small pieces)
  • 1/4 cup vanilla yogurt
  • 4 ounces cream cheese
  • 1 teaspoon vanilla
  • 1 3/4 cups confectioners' sugar

Recipe

  • 1 cupcake batter: cream butter and sugars, add mashed bananas. add eggs and vanilla. add flour, baking soda and salt. stir in yogurt. add walnuts.
  • 2 scoop into 12 cupcake papers (i used an ice cream scoop.) bake in a preheated 350 degree oven for 18-22 minutes, or until a toothpick inserted near the center comes out clean. mine took 20 minutes.
  • 3 frosting: whip cream cheese, vanilla and confectioners sugar, by hand or electric mixer.
