Buttermilk Crumb Cake

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 3/4 cup butter
  • 2 cups brown sugar, packed
  • 2 cups all-purpose flour
  • 1 egg, beaten
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Recipe

  • 1 in a mixing bowl, cream the butter and brown sugar.
  • 2 add flour; mix until blended and crumbly. set aside 1 cup for topping.
  • 3 to the remaining mixture, add egg, buttermilk, vanilla, baking soda and salt; stir just until blended.
  • 4 pour into a greased 13in.x 9in.x 2in. baking pan.
  • 5 sprinkle with the reserved crumb mixture.
  • 6 bake at 375º for 30-35 minutes or until a toothpick inserted near the center comes out clean.
  • 7 garnish with whipped cream if desired.
