Buttermilk Crumb Cake

Ingredients
- 3/4 cup butter
- 2 cups brown sugar, packed
- 2 cups all-purpose flour
- 1 egg, beaten
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Recipe
- 1 in a mixing bowl, cream the butter and brown sugar.
- 2 add flour; mix until blended and crumbly. set aside 1 cup for topping.
- 3 to the remaining mixture, add egg, buttermilk, vanilla, baking soda and salt; stir just until blended.
- 4 pour into a greased 13in.x 9in.x 2in. baking pan.
- 5 sprinkle with the reserved crumb mixture.
- 6 bake at 375º for 30-35 minutes or until a toothpick inserted near the center comes out clean.
- 7 garnish with whipped cream if desired.
