Banana Nut Cake

Ingredients

• 1 cup soft vegetable shortening
• 2 1/2 cups sugar
• 3 cups sifted flour
• 1 1/2 teaspoons baking soda
• 1 teaspoon salt
• 4 egg yolks, beaten
• 6 tablespoons buttermilk
• 2 teaspoons vanilla extract
• 4 egg whites, beaten
• 1 cup chopped pecans
• 2 cups mashed ripe bananas

Recipe

• 1 cream shortening and sugar.
• 2 combine dry ingredients and add to creamed mixture alternating with beaten egg yolks and buttermilk.
• 3 add vanilla.
• 4 add mashed bananas and pecans.
• 5 fold in beaten egg whites.
• 6 bake in large greased tube pan at 350 for about 1 1/2 hours.
