Banana Nut Muffins

Ingredients

- 2 large eggs
- 1 cup packed brown sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 cup mayonnaise
- 2 tablespoons butter, softened
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon allspice
- 2 teaspoons baking powder
- 2 bananas, 1 chopped and one mashed
- 1/2 cup all-purpose flour
- 1 cup whole wheat flour
- 1 1/2 cups chopped pecans or 1 1/2 cups walnuts
Recipe
- 1 preheat oven to 350°f.
- 2 place cupcake cups in cupcake pan.
- 3 in a large mixing bowl, beat the eggs and sugar for 1 minute on medium speed.
- 4 add salt, vanilla, mayonnaise and butter. beat for 1 minute on medium speed.
- 5 add cinnamon, nutmeg, allspice. beat until mixed.
- 6 add baking powder, all-purpose flour and whole wheat flour. beat until just combined.
- 7 fold in the nuts.
- 8 spoon batter into cupcake cups, a little more then 3/4 of the way up.
- 9 bake for 20 minutes or until a toothpick comes out clean.
