Banana Nut Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 15
  • 2 large eggs
  • 1 cup packed brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup mayonnaise
  • 2 tablespoons butter, softened
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 2 teaspoons baking powder
  • 2 bananas, 1 chopped and one mashed
  • 1/2 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 cups chopped pecans or 1 1/2 cups walnuts

Recipe

  • 1 preheat oven to 350°f.
  • 2 place cupcake cups in cupcake pan.
  • 3 in a large mixing bowl, beat the eggs and sugar for 1 minute on medium speed.
  • 4 add salt, vanilla, mayonnaise and butter. beat for 1 minute on medium speed.
  • 5 add cinnamon, nutmeg, allspice. beat until mixed.
  • 6 add baking powder, all-purpose flour and whole wheat flour. beat until just combined.
  • 7 fold in the nuts.
  • 8 spoon batter into cupcake cups, a little more then 3/4 of the way up.
  • 9 bake for 20 minutes or until a toothpick comes out clean.
