Blender Batter Waffles/pancakes

Total Time: 17 mins Preparation Time: 7 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups buttermilk
  • 1 egg
  • 2 tablespoons olive oil or 2 tablespoons canola oil
  • 1 teaspoon vanilla
  • 1 1/2 cups brown rice or 1 1/2 cups rolled oats or 1 1/2 cups millet or 1 1/2 cups kamut or 1 1/2 cups buckwheat groats
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder

Recipe

  • 1 blend the buttermilk, egg, vanilla, oil and grain in a blender or food processor for about 5 minutes or until completely blended.
  • 2 fold in the soda, salt, and baking powder.
  • 3 cook on a hot griddle as pancakes or bake in hot waffle iron for about 4 minutes.
  • 4 serve with maple syrup or fruit.
