Buttermilk Blueberry Pancakes

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 2 cups buttermilk
  • 2 eggs, lightly beaten
  • 1 tablespoon vegetable oil
  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking powder
  • 1 cup blueberries, fresh or frozen
  • butter or margarine (optional)
  • syrup (optional)

Recipe

  • 1 in a large bowl, mix buttermilk, eggs and oil.
  • 2 add flour, sugar,baking soda, salt and baking powder.
  • 3 stir until blended, but a few lumps remain.
  • 4 stir in blueberries.
  • 5 pour by 1/4 cupfuls onto a hot greased griddle.
  • 6 cook til bubbles form then flip and cook til browned on other side.
  • 7 serve with butter and syrup if desired.
