Banana Nut Muffins

Ingredients
- 3 very ripe bananas
- 1 egg
- 1/2 cup organic coconut oil
- 3/4 cup organic raw sugar
- 3 tablespoons milk
- 1 teaspoon pure vanilla extract
- 1 3/4 cups whole wheat pastry flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup chopped toasted walnuts
Recipe
- 1 preheat oven to 350 degrees.
- 2 in a large bowl, mash bananas.
- 3 heat coconut oil over low heat in small saucepan and add to bananas,.
- 4 mix in sugar, egg, vanilla and milk until all ingredients are incorporated.
- 5 sift in flour, baking powder and baking soda.
- 6 fold in walnuts.
- 7 grease a muffin tin or line with cupcake liners. fill 2/3 full and bake for 25-30 mins until golden brown and a toothpick comes out clean when inserted.
