Banana Nut Muffins

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 3 very ripe bananas
  • 1 egg
  • 1/2 cup organic coconut oil
  • 3/4 cup organic raw sugar
  • 3 tablespoons milk
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup chopped toasted walnuts

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in a large bowl, mash bananas.
  • 3 heat coconut oil over low heat in small saucepan and add to bananas,.
  • 4 mix in sugar, egg, vanilla and milk until all ingredients are incorporated.
  • 5 sift in flour, baking powder and baking soda.
  • 6 fold in walnuts.
  • 7 grease a muffin tin or line with cupcake liners. fill 2/3 full and bake for 25-30 mins until golden brown and a toothpick comes out clean when inserted.
