Banana Nut Crumb Cake

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 1 cup banana, mashed (apprx 2 large)
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1/3 cup sour cream
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups flour
  • 3/4 teaspoon baking soda
  • 2 cups flour
  • 1 cup brown sugar, packed
  • 3/4 cup unsalted butter, softened
  • 1/2 cup walnut pieces
  • 2 -3 tablespoons confectioners' sugar

Recipe

  • 1 preheat oven to 350.
  • 2 line a 9x13 baking pan with nonstick foil that extends over the end of the pan.
  • 3 crumb topping:.
  • 4 mix flour and brown sugar in bowl.
  • 5 cut in butter until mixture resembles coarse crumbs.
  • 6 stir in nuts.
  • 7 set aside.
  • 8 cake:.
  • 9 mix mashed bananas, oil, sugar, eggs, sour cream, vanilla, cinnamon and salt with whisk until well combined.
  • 10 stir in flour, and baking soda until blended.
  • 11 spread evenly into lined pan.
  • 12 sprinkle with crumb topping.
  • 13 bake at 350 for 40 minutes or until toothpick inserted in center comes out clean.
  • 14 cool completely in pan on wire rack.
  • 15 lift foil by end onto a cutting board.
  • 16 cut into squares and sprinkle with confectioner's sugar.
