Banana Nut Crumb Cake

Ingredients

- 1 cup banana, mashed (apprx 2 large)
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 eggs
- 1/3 cup sour cream
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 cups flour
- 3/4 teaspoon baking soda
- 2 cups flour
- 1 cup brown sugar, packed
- 3/4 cup unsalted butter, softened
- 1/2 cup walnut pieces
- 2 -3 tablespoons confectioners' sugar
Recipe
- 1 preheat oven to 350.
- 2 line a 9x13 baking pan with nonstick foil that extends over the end of the pan.
- 3 crumb topping:.
- 4 mix flour and brown sugar in bowl.
- 5 cut in butter until mixture resembles coarse crumbs.
- 6 stir in nuts.
- 7 set aside.
- 8 cake:.
- 9 mix mashed bananas, oil, sugar, eggs, sour cream, vanilla, cinnamon and salt with whisk until well combined.
- 10 stir in flour, and baking soda until blended.
- 11 spread evenly into lined pan.
- 12 sprinkle with crumb topping.
- 13 bake at 350 for 40 minutes or until toothpick inserted in center comes out clean.
- 14 cool completely in pan on wire rack.
- 15 lift foil by end onto a cutting board.
- 16 cut into squares and sprinkle with confectioner's sugar.
