14 Karat Cake

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 3/4 cup oil
  • 4 eggs
  • 3 cups carrots, grated
  • 1/4 teaspoon ground cloves
  • 1/4 cup margarine or 1/4 cup butter
  • 4 ounces cream cheese, softened
  • 1 teaspoon vanilla
  • 1 3/4 cups powdered sugar
  • 1/2 cup chopped nuts
  • 1/2 cup coconut
  • 1/2 cup raisins

Recipe

  • 1 measure all ingredients and mix in a large bowl- beat for 4 minutes.
  • 2 pour into a 9"x13" greased pan.
  • 3 bake for 35 to 40 minutes at 350 degrees.
  • 4 to make frosting, cream margarine, cream cheese and vanilla; fold in remaining ingredients.
  • 5 frost cake when cake is cool.
