Chewy Double Ginger Squares

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1/4 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 pinch salt
  • 1/2 cup crystallized ginger, chopped
  • 1 cup icing sugar
  • 1/4 cup butter, melted
  • 2 tablespoons lemon juice

Recipe

  • 1 preheat the oven to 350 degrees f.
  • 2 grease a 13" x 9" cake pan; line with parchment paper and set aside.
  • 3 in a bowl, whisk together the sugar, molasses, butter, eggs, and vanilla.
  • 4 in a separate bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves and salt.
  • 5 stir into the butter mixture until combined.
  • 6 stir in the crystallized ginger and scrape into the prepared pan.
  • 7 bake in the centre of the oven until a cake tester inserted in the centre comes out clean, about 40 minutes.
  • 8 let cool in the pan on a rack for 45 minutes.
  • 9 to make the glaze, stir together the icing sugar, butter and lemon juice.
  • 10 spread over the squares while still warm.
  • 11 let cool completely and cut into squares.
