Chewy Double Ginger Squares

Ingredients
- 1 cup brown sugar, packed
- 1/2 cup molasses
- 1/4 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1 teaspoon ground ginger
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1 pinch salt
- 1/2 cup crystallized ginger, chopped
- 1 cup icing sugar
- 1/4 cup butter, melted
- 2 tablespoons lemon juice
Recipe
- 1 preheat the oven to 350 degrees f.
- 2 grease a 13" x 9" cake pan; line with parchment paper and set aside.
- 3 in a bowl, whisk together the sugar, molasses, butter, eggs, and vanilla.
- 4 in a separate bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves and salt.
- 5 stir into the butter mixture until combined.
- 6 stir in the crystallized ginger and scrape into the prepared pan.
- 7 bake in the centre of the oven until a cake tester inserted in the centre comes out clean, about 40 minutes.
- 8 let cool in the pan on a rack for 45 minutes.
- 9 to make the glaze, stir together the icing sugar, butter and lemon juice.
- 10 spread over the squares while still warm.
- 11 let cool completely and cut into squares.
