Basic Crepes

Total Time: 2 hrs 2 mins Preparation Time: 2 hrs Cook Time: 2 mins

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon coarse salt
  • 2 cups whole milk, room temp
  • 3 large eggs, room temp
  • 5 tablespoons unsalted butter, melted

Recipe

  • 1 sift flour and salt into large bowl.
  • 2 whisk together eggs and milk then whisk into the flour.
  • 3 whisk in butter.
  • 4 strain the mixture into a medium bowl and refrigerate for 2 hours-1 day. batter should be consistency of heavy cream.
  • 5 heat nonstick skillet on medium heat, coat with butter.
  • 6 ladle or pour 3 tbs batter (small) or 1/3 cup (large) into pan.
  • 7 cook until top is set and the bottom is firm and golden.
  • 8 flip then cook until the other side is golden (45 seconds).
  • 9 serve asap.
