Basic Crepes

Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon coarse salt
- 2 cups whole milk, room temp
- 3 large eggs, room temp
- 5 tablespoons unsalted butter, melted
Recipe
- 1 sift flour and salt into large bowl.
- 2 whisk together eggs and milk then whisk into the flour.
- 3 whisk in butter.
- 4 strain the mixture into a medium bowl and refrigerate for 2 hours-1 day. batter should be consistency of heavy cream.
- 5 heat nonstick skillet on medium heat, coat with butter.
- 6 ladle or pour 3 tbs batter (small) or 1/3 cup (large) into pan.
- 7 cook until top is set and the bottom is firm and golden.
- 8 flip then cook until the other side is golden (45 seconds).
- 9 serve asap.
