Chicken Marsala

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1/4 cup cake flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon oregano
  • 1/4 cup butter or 1/4 cup margarine
  • 2 boneless chicken breasts, pounded 1/8-inch thick
  • 1 cup sliced mushrooms
  • 1/2 cup marsala wine

Recipe

  • 1 combine flour, salt, pepper and oregano and set aside.
  • 2 begin to heat butter in skillet over medium heat.
  • 3 dredge chicken breasts in flour and brown on both sides (2-4 minutes per side). remove chicken from skillet and keep warm.
  • 4 throw mushrooms into the same skillet and saute.
  • 5 deglaze pan with marsala wine. return chicken to skillet and simmer about 4 minutes.
  • 6 **variations: can add some cream while adding the marsala for a richer dish. or, can top with mozzarella and place under broiler or cover with lid until cheese melts. if you put under broiler, maker sure your pan is stove-top to oven safe.
