Bishop's Bread - A Christmas Favorite

Ingredients
- 1 egg
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped pecans
- 1/2 cup chopped well drained maraschino cherry (best to use the 'candied' ones from a jar,)
- 1/2 cup raisins (optional) or 1/2 cup chopped dates (optional)
- 1/2 cup semi-sweet chocolate chips
Recipe
- 1 prehead oven to350°.

- 3 in mixing bowl, beat egg with electric mixer for about 1 minute.

- 10 pour the batter into a greased and floured 9x5-inch loaf pan.
- 11 bake in preheated 350° oven for 1 hour, or until a wooden pick or cake tester inserted in center comes out clean. (if cherries weren't drained well enough, the excess moisture will increase baking time).
- 12 let bread cool in pan for 10 minutes then remove to a rack to cool completely.
