Bishop's Bread - A Christmas Favorite

Total Time: 1 hr 25 mins Preparation Time: 25 mins Cook Time: 1 hr

Ingredients

  • 1 egg
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans
  • 1/2 cup chopped well drained maraschino cherry (best to use the 'candied' ones from a jar,)
  • 1/2 cup raisins (optional) or 1/2 cup chopped dates (optional)
  • 1/2 cup semi-sweet chocolate chips

Recipe

  • 1 prehead oven to350°.

  • 11 bake in preheated 350° oven for 1 hour, or until a wooden pick or cake tester inserted in center comes out clean. (if cherries weren't drained well enough, the excess moisture will increase baking time).
  • 12 let bread cool in pan for 10 minutes then remove to a rack to cool completely.
