Bisquick Pineapple Coffee Cake

Total Time: 33 mins Preparation Time: 8 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 (20 ounce) can chunk pineapple
  • 2/3 cup brown sugar, packed
  • 1 teaspoon cinnamon
  • 1/2 cup walnuts, chopped
  • 1/4 cup butter, sliced
  • 1 egg
  • 2 cups bisquick
  • 2 tablespoons sugar

Recipe

  • 1 drain pineapple, reserving 2/3 cup syrup.
  • 2 pat pineapple chunks dry.
  • 3 mix brown sugar, cinnamon, walnuts and butter.
  • 4 beat reserved juice with the egg, bisquick and sugar for 30 seconds.
  • 5 spread bisquick mixture in a greased and floured 9-inch round baking pan.
  • 6 top with half of the walnut mixture, next all the pineapple, and then remaining walnut mixture.
  • 7 bake at preheated 400 degrees oven for 25 minutes or until done.
  • 8 cool and serve.
