Cherry Cheese Strudel

Ingredients
- Servings: 8
- 8 ounces fat free cream cheese 
- 1 egg 
- 1/4 teaspoon almond extract 
- 8 sheets frozen phyllo pastry sheets, thawed 
- 2 sheets low-fat honey graham crackers, crushed 
- 20 ounces light cherry pie filling, drained 
-  cooking spray 
-  confectioners' sugar (optional) 
Recipe
- 1 preheat oven to 400. 
- 2 beat first 4 ingredients until smooth. 
- 3 coat jelly roll pan with spray. 
- 4 cover phyllo with wax paper and damp paper towels to keep moist. 
- 5 place 1 sheet phyllo on pan. coat with cooking spray. 
- 6 sprinkle 1 1/2 t graham crumbs on top. 
- 7 repeat layering with remaining phyllo spray and crumbs ending with phyllo. 
- 8 spoon cheese mixture in a 3 inch wide strip along 1 long side of dough leaving a 2 inch border on long and short ends. 
- 9 top with pie filling. 
- 10 fold ends and long side over filling. 
- 11 starting with filled long side, roll. 
- 12 place seam side down and coat with spray. 
- 13 bake 25-30 minutes or until golden on top. cool.
