Cherry Carnival

Ingredients
- Servings: 12
- 1 3/4 cups flour 
- 2 teaspoons baking powder 
- 1/2 teaspoon salt 
- 1/4 cup shortening 
- 1 cup sugar 
- 1 large egg 
- 3/4 cup milk 
- 2 cups sour pitted cherries, found in the canned fruit section at grocery stores (drained, save juice) 
- 1/2 cup sugar 
- 2 tablespoons cornstarch 
- 3/4 cup cherry juice 
- 1 cup boiling water 
- 1/4 teaspoon almond extract 
Recipe
- 1 sift together the flour, baking powder and salt. 
- 2 add the shortening, sugar, egg and milk. 
- 3 beat until smooth. 
- 4 add the cherries and pour into greased 9 x 13 pan. 
- 5 bake at 350 for 30-40 minutes. 
- 6 for the cherry sauce, mix together the sugar and cornstarch in a small saucepan. 
- 7 gradually stir in 1 cup of boiling water and cherry juice. 
- 8 boil for 1 minute stirring constantly. 
- 9 remove from heat and add almond extract. 
- 10 to serve, slice the cherry cake and spoon the cherry sauce over individual slices.
