Brewton Blueberry Cobbler

Ingredients
- Servings: 8
- 3 cups all-purpose flour 
- 1 teaspoon salt 
- 1 cup shortening 
- 1 egg 
- 1 tablespoon vinegar 
- 1/3 cup water 
- 6 cups fresh blueberries 
- 2 cups sugar 
- 1/4 cup cornstarch 
- 1 tablespoon cinnamon 
- 3 tablespoons lemon juice 
Recipe
- 1 using a pastry blender, mix first three ingredients (of crust) together until shortening is the size of peas. 
- 2 quickly mix in other ingredients. 
- 3 work quickly and do not overmix. 
- 4 roll out pie crust and place in a metal sheet cake pan. 
- 5 (glass pans will stick.) crust will extend on all sides. 
- 6 dredge fresh, washed blueberries in sugar, cinnamon and cornstarch and place in pan. 
- 7 (blueberries should come to top of pan.). 
- 8 sprinkle with lemon juice. 
- 9 fold crust over top of cobbler. 
- 10 bake at 350° for 1 1/2 hours or until filling is bubbling and crust is golden brown.
